did a pre smoke burn off sunday night, and was very surprised by the results, using lidl briquettes.
used 2/3rds weber chimney, and monitered temps for almost 5 hours, actually struggled to get the temp down to 225f, without killing all the draught.
so monday night was to be the first smoke...

most ecb draught mods seem to be 2 weber type vents in the bottom, yet reading several posts, they only get opened half way.
Is the original central hole big enough for the required air flow, if so, why all the extra vents??
i am collecting all the bits i think i will need, to mod my new gourmet.
should have everything by mid next week.
my workshop was turned into chaos by kitchen fitters earlier this year,

before i decide on vent mods, it seems that most of you have three or four intake vents, but only open them about a quarter.
so it swould appear that you only really need one, which would obviously be cheaper, and quicker, not that...

just bought my first ecb, so keen to get the mods done and get smoking.
i have trawled the internet for the mods, but have found some conflicting results
mine has the air flutes in the bottom, but no central air hole
some are advising to flatten...
can anyone suggest the best thermometer for fitting thro a hole with a back nut
also, are there any ready made air vents available
cant seem to be able to locate a 35cm coal grate??

please advise the difference between the Gourmet smoker and the Smoke n grill.
apart from the Gourmey being a bit more expensive, i cant seem to find a comparison to explain why.
