A local store has some really good smoked Gouda on sale $1.99 lb. So my question is can you freeze it. I vac packed some but was wondering if I could also freeze some for say cooking (mac n cheese etc)

Found a 13# picnic (still had a bunch of skin attached) at Walmart $1.02 a lb. Got it Friday and rubbed it , let sit overnight in frig. Started smoking yesterday at 6 its now at 190 hope it turns out ok its my first. Couldn't not buy it for $1.02 even if it dosn't turn out great it's experience.
Has anyone tried Buffalo chicken ABT's. Cream cheese, franks hot sauce,cheddar, chicken and ranch dressing. Sounds like it would go well with the pepper and bacon.
Built a smoker out of an old old GE frig 3 1/2" walls. Tried smoking some cheese today.Using a Bradley smoker for the smoke. It got up to 120 and outside temp was 30. I think I need to add some ice next time. Cheese looked ok, vac sealed and going to wait 4 weeks.
