My GOSM was down waiting for a new burner assy and hose regulator control, so I bought a Smoke Vault 24" got it for $86 and $60 shipping. It got here during a remodel so I had to wait to assemble it. I really really like it it cooks well.

After 5 hrs of Hickory He loved it, I did the wifes fish later with less Smoke.
Tried to make salami. About how long should it take to come up to proper IT? I started at 120 for an hr then 140 with smoke for an hr 155 for 2 hr w/smoke then 175 after 7.5 hrs at 175 IT was 145. After that I was tired and upset so I bumped it to 225 to finish.

Hi, bought a MES 30 a few months ago to use in the RV. I hate the Temp swings, and am trying to duplicate Dave Omack's mods. Has anyone else done this? I have used a 1000W dimmer, removed the chip burner (reluctantly, it worked great) and covered it with a cookie sheet. Works pretty good almost...
Well had to do another Prime Rib for the wife (she takes good care of me), Pay back is Love. This time i did 2 of 'em 1 for me, timing was off on mine so I had to force it still came out good.

Ran out of pastromi, so I had to make more for the wife. Got a convection plate from Horizon, test burns worked well so now time to test with meat. Get a Brisket Packer and 2 chuck roasts. Soaked, Rubed, seasoned, and bagged. came time to smoke got the pastromi and brisket mixed up.
