I was smoking a whole chicken at 275 and I noticed I was getting heavy smoke. I opened it up, and saw nothing out of the normal. Come back out 30 minutes later and my smoker is off, and won't turn on. I remove the chicken and put it in the oven and take a good look at my smoker... And it appears...
Local grocery store had a great sale on brisket ($3/lb) so I picked up a 9lb to try for my first.
I rubbed it down last night and put it in my MES30 at 945am. Started it at 230* and bumped it up very gradually to 275*
5.5hours into the smoke I'm t 170* internal. I'm going to attempt to smoke...

Just got a MES30 yesterday and have spend the past few days lurking the site picking up tips and looking at recipes you guys have posted.
I figured I should try out my smoker right away and threw 5lbs of jerky in it...
