Tried applying the pastrami process to beef ribs instead of brisket, and the results were unreal. Smoked to 165°F on our Weber kettle, wrapped in tallow, finished at 204°F. The texture was incredible. Anyone else playing with pastrami outside of brisket?

We do love to see a good ice bath for testing - great work here. I would guess that if you put more ice in the cup to create that 32-degree temp. The water beneath the ice will have a temperature above 32°F.
Great question - it is fantastic to hear that they work flawlessly for you. We would suggest using your typical dishwashing method - if that doesn't get where you need to be - you can use a fine steel wool.
