Thanks for all the welcomes. Long cook tomorrow. Friends have a brisket and when I opened it there was more hard fat on it than normal. Another cut that they want cooked is a piece of brisket from 2021. Not holding out for a good result.

I`m a retired toolmaker and enjoy smoking and grilling all year round. Live in Indiana. My time is spent sharpening knives, scissors, and mower blades. Keeps me out of trouble.
