Agreed, they LOOK good. When you pulled to cube were they tender? Best description I heard is that your probe should feel like it's going into peanut butter. Sometimes temperature alone isn't a good enough indicator that you're fully rendered, tendered and ready to eat.
VERY nice congratulations on a good one!!! What smoking wood? What flavors other than pepper do you think came through?
I LOVE doing a chuck roast in lieu of brisket for the two of us. I also did a chucky as burnt ends once and that too turned out brilliant. I'm definitely on the lookout...
I love dill pickle Caesar's...I'll try that V8 mix...but it occurs to me that the V8 would neither be a Bloody Mary NOR a Caesar.....Maybe we call it the Red Steve? Red H? Either way I like mine with a little horseradish too...

2. Use the accessory rack. Putting the griddles on the grilling racks work fine but they're just big enough to be stoppedby the index points on the divide and conquer rack.
3. You need a...
I ended up with these: https://www.amazon.com/dp/B08KG9TXTK?ref=ppx_yo2ov_dt_b_product_details&th=1
Used them a few times and I have no issues. Heavy duty and I can choose to use one or two.
