I dont change the pellets. I use lumberjack competition blend on everything. Never dump or empty the hopper. Sits outside in all the elements 24/7/365 with a cover. Never a problem.
I put a boule in the banneton this morning around 8-9, then made happy hour plans and wont be home till 7ish.
I did a little ChatGPT search on how long I can leave it in the refer and it said 24+ hours could risk over proofing.
I could cook it when I get home, but predicting low motivation...

Yup, I was got sticker shock looking at new ones yesterday. I think I got my RT700 for around 1K with a package that included a cover, half dozen bags of pellets, grill grates, and some other stuff. But that was a long time ago.
I always have to remember: s**t doest get cheaper.
The Rec Teq will serve you well. I have had my RT-700 for over a decade and still runs like new. When I was shopping for my pellet my top three pics were: MAC, Yoder, Rec Teq based on what I wanted.
The new Rec Teqs are pretty sweet and loaded up with way more stuff than mine came with...
I doubt there will be an issue getting parts. They seem to use the same controller and probes in all/most of them. I am confident the heat deflector is also universal.
I have an RT 700 that is well over a decade old. The fancy new ones look nice, but my "old" Rec Teq is still going strong...
A buddy of mine has had both Sams and Costco and he thinks Costco is a little better.
My Costco is about 40 minutes away, Sams is next door to them. I just bring a huge cooler and fill the truck when I go..
Costco here usually has them.
But to your point - the butchers at Costco can be very helpful. always worth asking. I have asked for more briskets to look at and he pulled a few case for me to shop on.
My "local" butcher (its a 45 minute drive) always has them but they are quite expensive...
