    jinxed myself... Pulled my starter out last night and does not show any activity, which is not normal. we keep our house fairly cool-64 day time 58 night, Im sure that didnt help. did a discard and feed. hopefully it get spicy by this afternoon.

    Oh man, I would so made at myself. I got some home ground burgers out one morning before we went to hit the slopes. I wanted to hurry up the thaw for an hour or two on the counter before tossing in the refer for the day... Came home to very room temp burgers. Had to toss them. I beat myself...

    Personal preference, we prefer the electric oven over gas. There are pros and cons on both types. We have been using a dual fuel for a couple decades.

    The first couple briskets I did were flats. They were not good. Do the FP is by far easier. And you can vacuum seal the left overs for samis, tacos, chili, what ever. Just set it up, run it at 275, probe test when the IT starts to get close to 195 ish. Finish IT varies on every cook.

    This sounds like a flat, flats are difficult. SmokinAl has a flat recipe that folks say nails it every time. I'll see if i can manage the search... That said, a couple thoughts. A full packer is much easier and more forgiving. 225 the fabled low and slow temp is trash. I run all briskets...

    Thats odd, on our ranges the gas will flow, just the igniter has no power and we use a lighter. Since our oven was dead for 2 months we bought a fancy toaster oven, now its on a generator covered outlet. it was on a huge sale at the time. So its the back up and small cook oven now.

    Using filtered water and plain non-brominated, non bleached flour? I have had the same starter for years, leave it in the refer for months, one day at room temp and a feed or two and its booming. I only use filtered water (inline filter) and organic plain flour.
