    Reheat

The microwave works fine for me. I place it in a bowl and add either finishing pepper sauce or BBQ sauce to it and hit high for 30-40 seconds then stir and serve... Keep in mind at one time, the meat was up to 205 degrees minimum if you smoked it for pulling. the microwave works fine. If I had...

    wood grill

How about a hibachi? It's a great table top grill and won't require a lot of wood. You'll need to let the wood ember up and then knock the surface ash off when ready to char your meat. Keep a water sprayer nearby to kill hot flashes and keep ash down. We had one in Hawaii and i loved it. The...

    How much butt?

I'm with Piney on this too for figurin for friends and family. The more the merrier. People will always want to take some home. Take a look at 1/4 lb of pulled pork, it ain't much. It about makes a sandwich. Some folks will eat less and some will eat more. I like the 1/2 lb a person cushion and...

Pork Butt - Defrosting and Injecting

This is just how I do butts... I don't inject. I think most people are able to tell the difference and the flavors I want to impart to this wonderful cut are limited. This is one of the juiciest cuts and therefore it packs a load of flavor. The only flavors I want to add are smoke, some spritz...

    Brine for Cornish Hens?

Game birds also react favorably to a buttermilk brine. The buttermilk is highly acidic and is used a lot in fried chicken recipes. It does wonders for game birds as well. Base Brine Ingredients Start with 2 quarts of water (use bottled or filtered for this purpose) in a 3+ quart pot. Add to...

    How long will it last?

I don't think you are going to get a very solid answer, because there are just too many variables. What temperature are you trying to maintain in the smoker? What type of fuel are you using? What is the ambient air temperature? Is it humid out? Those questions are what we ask ourselves every...

    Cheese In MES?

Here is something else to consider. You can probably smoke cheese with items you have in your home without having to keep a close eye on your MES. http://www.smokingmeatforums.com/for...oke+cheese+box The writer used a US Mail box and a few other items to make a cold smoke box. This is...

I want to thank everyone for the nice comments. The ribs did go fast. I still have the tops all smoked up and in my freezer for some baked beans in the future. Even though it rained all day, I had a blast smoking them.

    Palm wood

Generally speaking, you want to use only hardwoods from fruit-bearing or nut-bearing trees. In my experience, fruit woods tend to impart a lighter smoke flavor, while the nut woods produce a stronger smoke flavor...

    are twigs ok for smoking?

Thanks Ron, but I'll continue to soak my wood as I have for over 20 years. Whether it's been proven or not is just a personal opinion and I appreciate hearing yours, so I'll skip the video for now. If I was smoking in an electric smoker, I probably wouldn't soak my wood either, but I burn fires...

    Christmas Party spare ribs platter

The ribs were ready to come off the grill about an hour before the party, so I lightly sauced and wrapped in foil to hold. To the person that said the first ones are BB's, yep, good eye. I didn't take any smoking photos as it poured all day long and I really wanted a grill shot. Good eye! :)
