Trying my hand at some pork butt...got 2 from Sam's, about 18lbs total before cooking.
Fired up the smoker around midnight last night, got it up to temp and the guests of honor go on around 1am. Air was pretty cool and dry last night, fought a little getting TBS to show up but finally things...
Never done anything like that but I would think a whole butt would take too long to reheat and might dry it out....probably the same with the brisket.
I'd probably pull it, put some finishing sauce on it and bag it up tight.
No clue what I'd do with the brisket.....if you've got enough...
Found some nice looking baby backs at the Wallace World and thought I'd give them a try.
I started out making Jeff's rub but didn't have enough paprika so I used some guajillo chili powder (sorry Jeff)...which changed the taste slightly and added some heat I think. I did make Jeff's BBQ sauce...
