I thought the idea was to leave the inside of the smoker covered in the "soot" to get better flavor? I clean the drip tray, bottom pan and water pan as well as grill before each session. Am I mistaken?

No foil just like it is. Hind sight I should have put it in foil with butter then after an hour smoking take it out and season then smoke. It was still good though.
