    This is my Christmas smoke for my wifes family get together. 8.5lb butt, 6lb Brisket Flat and Dutch's Wicked Baked Beans without the heat 4hrs into smoke Frying the bacon in the shop for the beans 8hrs into the smoke with beans and baloney in the smoker (baloney just for beer snacks)

    What temps are you running the smoker at, I don't have flare up problems at 225° - 250°, I do sometimes at higher temps. Give yourself plenty of time on the brisket, I did a 6lb flat Friday, I put it on a 5am and it finished at 8:30pm. It stalled for 5hrs. Every piece of meat acts different...

    Spray the inside with Pam crank it up to 3-350 if it will go that high for a few hrs. That will season it, if you put wood in it then it will just flame up
