    Pricing out Brisket - Yeesh

Interesting. I *think* the cut I was shown was about 16 pounds. So at $51 that is a good price then? Honestly, I thought American brisket was cheaper than that since it seems to be so popular...

    Pricing out Brisket - Yeesh

Here in Winnipeg, brisket isn't usually seen in the big grocery stores, so I thought I'd swing by a butcher to snag one. I keep reading the raves here so I wanted to try it. The woman presented me with one that had about 2 inches cut from the tip. No biggie I figured since it was a fair size...

It's going to be rib steaks on the smoker and many of these today...

pit boss start up over shoot

Yup. Usually what I do when the temp peaks and I am close to adding the meat, I just hold the door open for a minute to let the hot air escape. Then come back in a few and throw the food in.

Quick Question - Pork Shoulder Wrapping

Thanks to everyone for chiming in. Being the first one I've done, I think it turned out well. Despite wrapping, it still took almost 14 hours to finish. By then though I was too drunk to care lol. Turned out to be a very late supper.

Quick Question - Pork Shoulder Wrapping

Hi folks, I'm doing my first shoulder and have reached the 163* mark. Am ready to wrap. I would like to know if you folks leave the wrapping on for the rest of the cook or do you remove it when it reaches close to finish temp? Thanks, Mark

    Asian mix

The anise sounds interesting. I wonder what it would be like if fennel was added?

    stir-fry

Looks good. Did you fry an egg with the mix?

    New Pit Boss

One thing I learned about the beer can chicken is not to use a full can - drink 2/3's of it first. Liquid boils quicker and you end up with super moist meat.

    Tomahawk Ribeye.

Those look nice, but they look like rib steaks, not ribeye. Still very delicious though; I buy them all the time.

    Best “Portable” Pellet Grill/Smoker

We owned a Pit Boss Ranch Hand and found it to be a great unit. I could get 5 hours of smoking out of it before refilling the pellet box. We sold it because we ended getting a PB700 for a good price. I actually kick myself for doing that actually. I found the Ranch Hand to be a better unit...

    [Non] run-of-the-mill Beef Rub

I've never heard of black mustard. Where can a person get that? Oh, and is the coffee decaf?:emoji_laughing:

Smoke was rolling, Flames were dancing..

Looks very nice. I like the bean idea. We did kabobs with vegetables and I realized I didn't have anything to spread on them, so I dabbed on some Caesar dressing. That turned out really well!

    Something strange is happening.

You remind me of my wife. I can't count how many BBQ's she came home with over the years lol.

    Need some assistance

I did one up last week. Smoked with apple for 3+ hours at 225* - until temp reached 160*. Since it was loin I placed a small bowl of water in the smoker. Best choice I made since it came out extremely juicy. Use your favourite pork rub; I just used a generic one I bought from the store...

Good for you bro. For some rather strange reason, I feel you won't have problems with the Yoder.

    Rec Tec RT700 question

Funny, I used to purchase a lot of steel parts from China. That is until I realized what their steel was really composed of - anything and everything including your car door. They don't care about quality when it comes to metal parts. Nowadays, when I order steel, I receive a printout of what...
