Yup. Usually what I do when the temp peaks and I am close to adding the meat, I just hold the door open for a minute to let the hot air escape. Then come back in a few and throw the food in.
Thanks to everyone for chiming in. Being the first one I've done, I think it turned out well. Despite wrapping, it still took almost 14 hours to finish. By then though I was too drunk to care lol. Turned out to be a very late supper.

I'm doing my first shoulder and have reached the 163* mark. Am ready to wrap. I would like to know if you folks leave the wrapping on for the rest of the cook or do you remove it when it reaches close to finish temp?

One thing I learned about the beer can chicken is not to use a full can - drink 2/3's of it first. Liquid boils quicker and you end up with super moist meat.

I did one up last week. Smoked with apple for 3+ hours at 225* - until temp reached 160*. Since it was loin I placed a small bowl of water in the smoker. Best choice I made since it came out extremely juicy. Use your favourite pork rub; I just used a generic one I bought from the store...
