    Need Advice!!

Great advice from Steve H. Would add consider a contractor in your area that will also service the generator. This might impact the brand you select. Have a generac 20kw propane with auto transfer switch about seven or eight years old. A few issues - plug coils failed and replaced a battery...

Big stall and drop in 20-hour pork butt?

No problem 😊 been there many times. Looked up the sm-009 - it is analog type controller. So it has a temperature bulb like an oven. The picture in the manual indicates the bulb is below the middle rack. If the meat is pushed against the rear wall this might impact the reading. The...

Crazy Cajun Sausage Pot Pie (Lotsa Pics)

Your creation looks like a keeper! We do something similar called a taco pie (meat, shells, refried beans, black beans, taco spices, onion, bell pepper) . It has no rice and can be a bit runny when first out of the oven. We chill it in the refrigerator overnight and it will slice nicely the next day.

Big stall and drop in 20-hour pork butt?

Not clear as to what model you have. Is it the SM-360? We cook with a SM-160. As other's have suggested check cooker temp at grate level with a calibrated probe. Also check your air in&out holes for blockage. Placing the meat against the internal cooker probe is a possibility but results in a...

chef jimmyj question on 2 cuts of pork like discussed before.

Have purchased two pack several times from Piggley Wiggley. Comes in two pack. Like pic JJ posted but split down the spine - head to tail. Depending on skills and equipment the spine can be a challenge to remove. Overall yield can be loins, chops, ribs, fat and trim meat for grinding. Last time...

    Portable generator

Have 20kw air cooled with auto transfer switch propane fueled. For us it is an important component of the home. Have run 10 days straight due to hurricanes. Makes it great for the wife, nothing to switch or worry about since she fears electricity. When you review your options consider where...

I am going to sous vide then smoke a butt

We cook with a Cookshack SM160. Cook temps have been as low as 225 and as high as 275. Finally selected 240 for butts. Butts range from 8-12 #. Cook time runs 8-12 hours. We will temperature check @ 8 hours looking for 190-205. Will probe check @ 198 looking for "soft butter" feel. As Smokin...

    Hobart Slicer 2712 Base Paint

If you are trying to color match perhaps take a a color sample to a paint store, like Sherwin Williams or similar. Have done this many times on shop machinery with good results. Just will not be a spray can.
