    Thanks no boundaries. We are doing fries, Mac and cheese, potato salad and coleslaw. Will also be doing bacon wrapped chicken thigh to start. I guess when you think about sides and started it should be more than enough.

    At 300° 40 minutes uncovered then cover with foil for 20 minutes. Take off smoker out of tray, dust with rub put on rack and back on smoker for 15 minutes, dip in BBQ sauce put back on rack and in smoker for 5-10 minutes.

    Thanks guys for the responses. Ok so how about this idea? Smoke them for 2 hours, foil wrap them and cook to 160 or 170 IT. Take them off and cooler them while still monitoring IT and making sure it doesn't hit 140. When the time suits me, get out the cooler, unwrap and finish on the smoker...

    Thanks Al. They also had top sirloin at $11.99 per kg, average size 6/7kg so around $75+. Would this a better cut to smoke as a roast rather than cutting thin for sandwiches? Worth paying the extra for a better cut? Thanks
