    Did my first cheese today. Sharp cheddar and pepper jack. It was a small batch. Smoked for 3 hours with cherry pellets. First time using the amnst and completely love it. Still have yet to use the amnps I got for Christmas as well. Will post more pictures next time was to excited today to think...

    A wireless digital thermometer is a must. I suggest the maverick et732 or et733. Much more accurate than what the unit comes with.

    Storage of your MES smoker during winter...

    Keep mine in the garage. When i left it outside in the winter it got condensation on the burner and kept tripping. That was with a cover on it and a roof over it. Once it was put in the garage I haven't had that problem again.

    At the page where it shows all the threads near the top of them where it has the page numbers, to the left of that it says start a new thread and that's what you'll select. As for boiling a turkey I have no idea.

    Questions about smoking a butt.

    I've done a few unwrapped butts and they didn't come out dry at all and that was cooking only on the grate. It should still be plenty moist unwrapped in a pan.
