    Looks good! Bearcarver's recipe makes perfect Canadian Bacon. The only problem is, I drove by East Texas, and didn't smell it! I'll be throwing some in the smoker in a bit, maybe you'll smell mine!

    Boudin eating experts

    I always eat it, but then I actually grill my Boudin. I always end up making a minimum of 10 lbs at a time, stuffing 5 lbs, leaving the other half loose, and since I'm the only one in my house that eats it, I can make Boudin Balls, and even stuff a chicken with it and Tasso Ham.

    Sorry, I forgot to take pics, but it actually turned out really well. Not quite real smoked Nova Lox, but better than basic lox. I'm going to smoke some sugar next and see what that does to the cure.

    I want to do a block build with an offset firebox using terracotta flue pipe as a smoke channel, but I can't find any locally (Eastern PA)... does anyone have any recommendations? I think I'm missing the obvious somewhere. BTW, Tractor Supply has the best price on fire brick.
