I purchased some packs of Cabelas brand jerky seasoning and cure kits. They contain packs of seasoning and cure for 5lbs batches. The instructions do not get ratios/quantity for batches smaller than 5lbs.
The seasoning packs and cure packs both say 2ozs on the packaging.

Wether you use casings or not, is it essentially the same? Both with ground meat, seasonings of choose, cure, and then smoke?
Do you use a stuffer, or what is your preferred method for using the casings?

Just reporting back - the brisket flat was on for a total of 7 hours. Started around 7.25 lbs and trimmed a bit of fat off.
It turned out pretty good. It was a littler drier than I was hoping. I think it could have went a bit longer.

I have a 7lb brisket flat. If I run my pellet cooker at 250*, should I plan for roughly 7 hour cook time (1 hr/lb)? Or, do you suspect it will cook faster than that?
I will pan it and cover in foil around 160* IT.

Update - both stalled out around 150* IT. I put the chuckle that will eventually be burnt ends into a foil pan with beef broth, covered. The sliced one was wrapped on butcher paper, and the Traeger has been turned up to 275*.
