Something went wrong and the charcoal almost went out. I cracked open the bottom damoer and opened the top damper all the way, but it didn't raise the temperature a lot. I let it cold smoke for a while and then transferred it to the oven. I'm sure it will still be good. I think I know what I did...

I've smoked meat since the 1990's, but never a capon. I bought an eight pound capon and. today I start brining it in Pop's brine and will slow smoke it with pecan wood tomorrow. I will post a pic and let y'all know how it turned out.
Went to the hospital with pneumonia last week. The pneumonia and 44 years of smoking did a number on my lungs. I have also been diagnosed with congestive heart failure. If you're smoking thinking that you have more time, that's what I thought. It can catch up to you Suddenly.
