    go for it. $125 is not a bad price, that's what I did and never regret it. you pick up tips and get to pick their mind, also they feed ya! I got 1 tip at a $50 dollar class years ago on briskit and its paid off over and over, $ and awards.

    what I like about the FEC is,or should I say sold me was they're NSF approved . just in case the health dept. gets involved while catering or vending.

    you can still be a pellet user and cater too, cookshack's FEC series work excellent for what you need.

    my suggestion , which is what I do, smoke it bare till around @ 160*. then put it in a 1/2 pan and foil the top till @ 200*-205* , rest then pull.

    one small hole won't hurt the cooking process. I sometimes have 2 or 3 holes as I check different places for temps.

    love myron or hate him, after seeing him on the craig fergason show, and all the other talk shows, myron is a good actor. one show he's cuss'n and bad mouthing people and the next he's dancing around the room with his injector pump in a comic skit. I like all of them and learned alot about them...

    for large amounts I use a old hickory sse, go up to 600#. cookshacks for smaller amounts. Its a lot of work but its good money.

    I like fresh cut wood myself, if not fresh then soaked in water. just dont like aged, dried wood.
