You aren't wrong! I ate quite a few slices and chopped/froze the rest for tacos, chili, etc.

I'm way behind on posting, but we had a low key 4th. I did a hot and fast brisket the day before, so kept it simple for the 4th with burgers and brats.
All the meat came from the University dairy. The burgers are a ground pork/bacon blend that is just amazing, and the brats are a "special"...
