    since they are (presumably) fresh kielbasa that you picked up, they won't have cure in them. you will need to hot smoke to a safe temp relatively quickly. so think 260 to take it to 160 is about right.

    bumped it up to 255 trying to get this thing finished before a trip to the hospital to see mom. man, this butt is STUBBORN. taking as long as some 11lb butts I've done in the past.

    ZERO sleep. bad night for the 7 day old (which in turn means bad night for me). But anyways, the butt is at 191 right now, it hit a slight second stall it seemed like at 180. I may turn up the heat a bit to 250 to try to bring it up the last couple degrees before my day really gets going.

    I've gotten them as low as .99 cents (from a fancy place no less), but can pretty well find them at 1.69 or so either from sams, Costco, or other grocery stores in my area. I got 4 at 1.29 per at a local "Spartan" branded grocery store (that's whats in my smoker right now as a matter of fact).
