Don't know about 195 but all I can tell you is that after reading lots of posts, I've moved my smoker temp up to around 250 to 265 for everything. Even higher for chicken.

HI. I thought I did a good thing, but now I need some opinions.
I bought a pack of (4) boneless strip steaks at Costco for $6.99/pound.
They were thawed, not frozen.
They were about 1 1/4 to 1 1/2 " thick.
I put them on the gas grill right out of the fridge, same day I bought them.

If you look closely at the photos, you'll see that I use a cast iron skillet on top of the sheet metal tray.
The wood chips go in the skillet and I don't know why, but they never catch on fire.
Funny thing, the only time I had a fire start was when I used 'chunks' of wood instead of the chips...
No, I didn't flip them.
I had all 4 on the rack that's 3rd from the bottom (or 2nd from the top).
I just put them on the plate that way because it looked like a better photo op.

I've got a propane Masterbuilt vertical smoker (my first smoker).
I've done a lot of the mods that were recommended... cast iron fry pan for wood chips, using an aluminum disposable tray for water, checking internal smoker temp with an independent thermometer.
