    Like Al said welcome to the site. Yeah thats the temp we are going for if you want it to pull properly. If your concern is dry or tough meat at that temp you an put that out of your mind. This stuff melts in your mouth if you do it right.    Thank you sir, I appreciate it!

    HAHA! No kiddin, I think the average hog size is around 250lbs. So a 16lb butt would come off a roughly 500 lb hog! I almost always get my butts at Sam's so the opinion is an educated one.

    They come in two packs at Sam's thats not one butt I can guarantee it. As far as the sauce gos I would just serve it on the side and let them decide how they want their meat. Good luck and happy July 4th weekend!

    Do you have room to put the pan underneath on a lower rack? That would eliminate your worries about inhibiting the smoke penetration.
