Hello . It's all common sense when it comes smoking fish , ( my opinion ) . If you hot smoke for yourself , make it skinless . If you cold smoke it
for export , or selling , leave the skin on so the meat does not fall apart .
Hello . There is not any difference to preparing channel cats and bullheads in the same type of brine . Just less time in smoker because of smaller size . ( common sense ) .

I am building my shed with 3/4 in plywood, 4' x 8' . I will put the firebox about 5--6' from box.that should be cool enough. ( Of course there will
be a temp gauge attached ). Also , I live between 2 lakes where I can get my fresh fish.
