    If this was my party, I'd do the same, but then it wouldn't be a whole hog.. I'd do 50# of butts and be done with it. But.,, The biggest part of the " whole hog" cook is the visual pleasure for the guests. You please their eyes, you've got there stomachs. I still need advice. Lol...

    I cant see it being not used to smoked meats. I've cooked ribs, chicken, brisket for friends and family that have never had smoked meats. Never a issue. Too much smoke, well i think he and his family would notice the bitter taste, and those not used to smoked foods would REALLY notice it.

    Maybe it was his prep space or utensils? Are the grates in his pit clean? Lots of variables could be the cause.

    Plug it in and set the temp to 300*. Shouldn't take but 15-20 min to reach the set temp. Does it have the old style 3 piece heat shield and one piece drip tray, or the newer stainless steel system? What's the asking price. Cover, insulated blanket?

    Assuming these were live trees, in my area, oak takes up to a yr to dry out. Cherry 4-6 months. Not sure how the humidity in your area would effect that.

    Thanks Gary. Thanks.., I've got a 6” drop hitch on my '17 3500 RAM, and I'm still 2” nose high. So with the proper hitch, I'd have around 8” of clearance.
