I was having trouble getting a good bark on my stick burner and i changed two things that helped majorly:
1) Use an elaborate amount of rub. I wasn't using nearly enough
2) Cook at higher temp. I never cook below 275 now.
These two things helped me greatly.

Decided to fix a Butt yesterday to eat on this weekend. It was a medium sized bone-in butt from my local grocery store. I opened her up and rinsed her off really well and rubbed her down with a good coat of yellow mustard.

Love my Ok Joe Longhorn. Sealed all the cracks with high temp sealant for $8. Lined the doors with wood stove gasket for $14. Lowered the exaust to grate level with a 3" elbow for $3. Cooks as good as a $900 unit.
