Sittin pretty at about 120 degrees. Change of plans. Leftover ribs from last weekend and wings! Wonder what else I can find in my fridge to make the time go quicker?
Pork shoulder on, prolly throw some brats covered in mustard and Jeff's rub for lunch, pulled pork around midnight. Gotta love sleeping through 6 am alarm on the weekend!
Figured I grabbed hot paprika instead of regular at the store. Made another batch for my 17.5 hour brisket I smoked all through the night this past Saturday and wasn't spicy at all. Appreciate everyone's comments

It was a different jar of cayenne this time. It was a McCormicks brand in a glass jar. Pretty pricey for Wally World but that's all they had. Assumed there wouldn't have been a difference. I'll have to take a closer look next time and make any necessary...
Thanks for the reply! I made the rub and sauce the day before the smoke and very well could have mistakened measurement(s). Just had leftovers for lunch. First one not so bad. By the third, watch out.
Could putting to much rub or sauce on effect how spicy it is?

Smoked some spare ribs yesterday 321 method and they turned out way too spicy. Used Jeff's rub and BBQ sauce. I have used them many times in the past and have never experienced this amount of heat before. My wife tells me I must have mistakened a tsp for a tbs on cayenne. the spice overwhelmed...
Thanks JJ. Wings are taking longer than anticipated. Going on 2.5 hrs now. Should be 1.5. Having a hard time maintaining a 255 temp. It is pretty cold out. Getting ready to throw shrimp on
Smoke time for scallops was around 30min
Prep involved olive oil and Jeff's rub, left over night in fridge. Bacon wasn't done so I took the scallops off unwrapped bacon and put bacon back on. Wife said shrimp and scallops were amazing! Ribs and pulled pork were gone in about 3 hrs of our party...
Well..... I wrapped em in bacon to hold juices of scallops. Wife then added shrimp to menu which turned out well, apparently! I was taste buds deep in the ribs and pulled pork. But final results........... All praise. Was a bit Leary on the sea food. Great day of smoke!!! Time for a good brew...
