Turned out really delicious! It took about 2 hours total, temperature hovered around 230-250 the whole time. Some more pics with grilled peppers and strawberry, apple, pine nut and feta salad.
This afternoon I stopped by the local grocery store and had them cut me some thick center cut pork chops. Currently I'm an hour in to smoking, using Jeff's rub and a combination of apple and oak for smoking. Looking good so far!

I've been using Alton Brown's "Ring of Fire" chicken recipe for a long time! Basically you brine your meat prior (if you don't, you'll need to add salt to this rub) and then use this rub:
1 tablespoon curry powder
1 tablespoon chili powder
2 teaspoons cocoa powder
1 teaspoon adobo powder...
