Had a good price on Salmon today so I picked one up to smoke. First time smoking one so had a question for you guys. Im seeing mixed results on the internet of what temp to smoke and how long. Some folks say 140-175 others say 250. What do you guys suggest?

I got myself a Enzoo for my WSM. Its only about $50. It works great. 4 probes for meat and smoker temp. Its wireless so I can take it anywhere with me and keep track of my temps. It can also be set to what temps you want the smoker and the meat and will alarm when it has hit your desired...
I started out doing it by time and figured I'd throw the temp gadge in after awhile but by the time I put it in ribs they were done. I put a probe inside my smoker to watch the temp. Mine is about the same as you. Off around 25 degrees everytime.
I decided to give the WSM another go with some chicken thighs.
Took the skin off so I could make some crispy chicken skins for the side. Put em on a wire rack at 375 for 45 mins with Jamaican lemon pepper.
Rubbed the thighs with some Sweet and Smokey. Threw em on cooked for about 2 1/2 hours...
You called everything I did, man. You're good. Yes I put the chunks on top of the coal and I added quite a few hot to the cold. I also did use Kingsford blue bag. What kind do you suggest I use next time? Thanks for the advice, man! Much appreciated
