Those are some great looking cuts, and nice cook on them. Good job, I would have seared them a bit more on the fireside but opinions come in all shapes. Still I would eat them and enjoy every minute of it. Good job great looking steaks, and good job cooking them.

Smoke on a pellet is controlled by temp when a recipe calls for 225 go 250 or 275. Your food will cook a bit faster but there will be a lot less smoke from your pellet grill. However the smoke is much cleaner on a pellet grill. Has your wife complained about things you cooked on your grill?
Lumberjack, I am in Arizona that has BBQIsland and I use those pellets. I am getting great smoke flavor. Lumberjack is a close second, I would use them as a good all round pellet.
I think you trimmed it a bit much, and prime is the way to go you should se marbling through the meat. I am just starting to get to the point where I can tell a good brisket from a bad one at the meat shop. I would also go a bit lighter on the rub.
Yeah I only really follow the smoke rule on poultry. I try to get it above 140 in 2-3hrs. Never got sick off the food I smoked. Keeping your grill clean, and working proper will do more to keep you healthy tan time spent in smoke mode.
You can also get a temp controller, I developed one for my Kamado, at I can get 20hrs of 225 on a full load of lump. You will have to stir every 8 hours to get the ash out but it can be done. I do briskets all the time on it and they turn out awesome.
Get the biggest ceramic you can afford, but it is worth the money to get the kamado joe for it‘s ease of use and options. I know it blows out your budget, but it is worth it.
Yes the PID controller will control temps very accurately. Most the smoke you get on a pellet smoker is from when the pellets are smoldering. The time based ”cheap” controllers will allow the pellets to ketch on fire then smolder out, and then it will feed more pellets in and they will smolder...
I have all of the grills, and if you are looking only for a smoker the pit boss vertical is for you. If you want a good all a rounder that does more than Smoke then the vertical will not work out. Yes you can get the vertical up to 350-400 but you have to take out the water pan and it will make...
Cover cover cover! Right side is a bit hotter than the left side. Do not let any rain hit that smoker or water get in it. Otherwise pellet jams will occur. If you have high humidity remove the pellets or run the hopper down weekly. Vacuum out the fire pot every other cook.
I am in Arizona and have looked at the wood supplier, I can get better pricing if I buy a larger amount of wood. I just don’t cook enough on it to really go that route. My offset is a cheapo Oklahoma joe, and it is smaller which makes it difficult to control temps.
