    My last beef my brined the meat for 3 days with salt water and garlic  then just used cracked black pepper corns 1 tablespoon and 3 tablespoons mesquite seasoning on the meat. Seems like I use something different every time.

    Brining adds moisture to the meat and I added some meat tenderizer to the brine makes the meat really tender.  You can also add spices that flavor the meat in this one I added lots of garlic 2 heaping tablespoons.  So good.

    I always inject cure/brine mixature into the center of a thick cut of meat.  If you don't you take the chance that the cure does not make it to the center.
