Yesterday my son and I took a Smithfield Spiral Sliced Ham and rubbed it down with paprika, white sugar and onion powder. We wrapped it and stashed in the fridge overnight (actually about 24 hours).
Today we took it out and put it in my MES40 at 250*F for 3 hours.

Dutch has posted his link for the original recipe. I'll send you my modifications to make them "Not So Wicked" I prefer Dutch's version, but when feeding a butch of kids (scouts) I didn't want to hurt no one, LOL. The "Not So Wicked" version has absolutely no heat. The Scouts loved them though.

Wood was advertised as 25 pieces for $10. Called the guy (he runs a tree service) he told me he would give me 30 for $10. I told him I wanted a total of $100 bucks worth (300 pc.) but then he loaded about 400 pieces. I was very happy and he is now my bbq wood guy!

Went by Sam's Club and couldn't resist picking up one of these...........
