Edit: Just read and it says meat temps up to 199. I guess I'll use this in the meat and use the other one on the lid for internal temp.
So, I'm thinking some beef ribs and a small brisket for this weekend. I have two questions:
1-Where does everyone purchase the brisket? I see the corned beef but that would be used for pastrami correct? I would need the fresh cut and not 'treated' with any salt or what not right?

So, I have probably the most simple no frills smoker out there. How does one regulate the internal temp of the smoker? Should I install one of the these on the lid, all I'll need to do is drill a hole?
That's friggin' awesome, there is no access to the charcoal pan in my, no pun intended, little unit. Need more charcoal, just lift up the main body of the smoker by the handles, throw a couple more briquettes on and put smoker back over the pan.
