    Stalled chuck roast

    Packer briskets have been hard to find near me, so I started smoking big chuck roasts (4lbs+). They don't need trimming and there's no waste. The experts can chime in, but it seems they need more time than briskets. Maybe it's the muscle composition vs a brisket. I've smoked them this year...

    I smoked a 2.5lb chuck roast at 275 last week, it took almost 8 hours. Earlier this summer, a 4+ lb chuck at 275 took over 10 hours.

    I used to wrap with foil, but switched to butcher paper based on a lot of the comments and examples here. It contains the steam enough to cook meat faster and breathes enough to keep the bark pretty firm. The other thing a lot of the experienced smokers here do is cook at higher temps, 275...

    What time were you planning to serve it? I've attempted that temp/start time with butts/shoulders and it took a lot longer than planned.

    Here's my rig

    The 15000btu burner should be good. It was recommended putting holes beneath the burner would complement the existing vents. I eventually drilled about a dozen half inch holes.

    Good luck with the mod if you move ahead with it. The holes in the bottom were added after I put the burner in.. the flame was choking out. Initially, I thought the 15000btu burner was too big and considered finding one around 10000btu. I was smoking at 225 with water in the pan and needed...

    The chuck has SPOG and is going now, I'll post a pic when I wrap it and put the sausages on. I'm using half of a log of post oak and a couple big chunks of mesquite. It's kinda windy today and the temp's bouncing around between 260 and 310.

    I took a look at them and they were too big to do today. I guess I could've cut one into smaller pieces, but I'm hesitant to try something new when this is one of my last smokes of the season. I may try one next year. Ended up getting a 2.5lb chuck roast and a dozen sausages.

    Yeah, chucks have become my favorite. For some reason, briskets have been hard to find this summer at walmart and costco, but big chuck roasts are everywhere. And there's no prep/trimming so it's pretty easy.

    I was looking at indaswamp's link, sounds like capturing the liquid to add to the pulled meat is important, and you don't go to as high an internal temp as brisket/chuck.

    The local IGA has them $3/lb this week, not sure how big these are either. I've had great results with chucks (around 4lb), but never tried a shoulder. Could I SPOG one and smoke to 160+/-, then wrap until 200+? Thanks.

    The other thing I learned here is, if I was neighbors with chilerelleno, I'd be picking through his garbage can every night :emoji_sunglasses:
