    Looking for classes in Virginia

Hi. I’m interested in finding some smoking classes to attend in Virginia. I did a nice brisket class earlier this year that was helpful, would like to find more.

Mixed readings with Thermapen Mk. 4

I have a new Thermapen Mk. 4 and have had some odd usage out of it, and today I decided to be very focused on the readings it produced. I have some beef ribs that were close to ready so I checked them with the ThermaPen. I keep getting different results that vary by a significant amount. It...

    Advice needed for pork belly

The pork belly came out good! I lightly pan fried a few 1/8" slices like bacon to try and help the texture and that seemed to help. Next time I might just do burnt ends. Should I cube them before smoking, during smoking, or after?

    Advice needed for pork belly

After only 3.5 hours total, it was up to 210 in the foil. I removed from foil and put back on the pit where the meat temp came back down to 195. Being in that foil with all steam really heated it up. I’m going to let it smoke longer and start probing it around 200. Next time I might go with...

    Advice needed for pork belly

I’ve only had pork belly from one place but I love it. It comes sliced about 1/4” thick with a nice texture on both sides as if it was lightly fried after being smoked. That is just a guess, but since it has that texture on both sides of the wide part of the slice I’m assuming it was run past a...

    Bison short ribs cook fast?

today I put a plate of bison short ribs in the smoker at 250. I’m just over the 3 hour mark and they are already at 195. My plan had been to wrap at 165 thinking they might need a little extra help to get tender, but I appear to have shot past that. So I still wrapped just now but expect they...

Vacation brisket with no smoker available. Oven?

Going to a beach vacation house with family, the place only has a super cheap grill that has zero chances of being converted to doing an offset cook. And our car will already be packed to the gills so no room to squeeze my WSM in it. I'm sure I can do a lowandslow in the oven even if it won't...

Where to get team shirts for new competition team?

Matt Pitman called his a beer truck shirt. Still can’t find them. Chef shirts appear to be something else - no collar, usually long sleeves, etc

Where to get team shirts for new competition team?

All the pros and even some of the backyard comp guys have nice collared shirts with their team logo embroidered. Is there a standard shirt style this is called and where can I get some? It gets dang hot and sticky in Virginia, certainly more so manning a hot pit, so preferably one that breathes...

    New Camp Chef WoodWind

I have a new Woodwind hopper arriving tomorrow myself. Seems odd to have to cut the harness as I thought the hopper contained all the electrical/electronic parts. I'm hoping it is just a matter of unbolting the hopper, sliding the old hopper (with auger inside) off the grill and sliding the new...

How to find bbq food trucks in my area?

i’d like to sample some food truck food from any that specialize in bbq. How does one find them? Don’t trucks sometimes move around? Either they lose access to a space or lot they originally used or other reasons (looking for greener pastures)? If so, is there any app or tools used to find them?

Well, pulled the trigger on the Camp Chef

Yeah, I'm new to pellets too and trying to adjust to the new smell and taste. It smells like smoldering sawdust, which I guess it is. I'm burning camp Chef and Pit Boss and they smell the same to me. Frankly I am not convinced they are not the same. I've looked closely and the Competition blend...

Well, pulled the trigger on the Camp Chef

What do people mean when they talk about airflow around the lid? Flow which way? In my Woodwind the fan blows in fresh air constantly from beneath the hopper such that hot air is vented out from the chimney, grease trap and around the door. If you seal the door up wouldn’t the same amount of air...

    New Camp Chef WoodWind

New Woodwind owner here too. I have not done burgers but did do some chicken thighs last night. I ran it on HIGH which at one point go to just over 500. It did fine but I would not try anything lower unless I was going for something like a reverse sear. I think it needed the highest setting to...
