    I usually use creole butter but have also injected a mix of butter, salt, and lemon juice for my wife.

    A salt brine for a few hours is also good. It doesn't take long for the gills because they are so lean.

    I did using some season salt and smoked them with apple and hickory, very tasty.

    I use foil pans too, it's easier than trying to foil.

    I had one climb on the roof of my house one night and it stayed up there 2 days. That was until I took a push broom and launched it off. Boy was it surprised. I live in town and my 12 gauge is just to loud to touch it off. Oh btw, never had one mess with my smoker.

    Beef tenderloin

    I did a venison loin a while back and used a sprig of fresh rosemary, fresh thyme, garlic, salt , and water. Left it in the frig overnight to soak up the flavors. Pecan is my favorite for beef.

    Cheese whiz mixed with canned corned beef and spicy mustard. Spread the mix on bread then broil.
