So today I tried my side burner to start my Weber Chimney charcoal starter. I must say, it worked great! It seemed like the chimney lit in half the time! I started it on there until it got halfway lit and then moved it. Do you guys who use the sideburner wait until it's all the way lit...

I never thought of that! That's a great idea! I never even use my side burner. I thought that charcoal ash would eventually clog up a gas burner if you burnt charcoal over it? How long have you been doing that?

Yeah, I have the same problem with mine. BBQ sauce on there from grilling chicken leg quarters. You take a steel grill brush to them and it takes seasoning right off. If your smoking too, the grates won't get hot enough to burn the bbq sauce off. lol....
Ok, well my brother is a really good welder. When I put my SFB on, I still have the knock out. I'm just going to cut a piece of the steel out to size and have him weld it on. I'll replace that thermometer with a 3" smoker one I got off of ebay. I'll order 2 more smaller ones for the bottom...
I sent Char-griller an email about my thermometer being way off. I got an email back saying that the thermometer can be calibrated, and they were going to call me back to give me instructions on how to calibrate it. Does anyone know how to do this?

Ok, did i caculate this wrong? I thought it was an hour to 1.5 hours for each lbs of meat? last time I smoked a shoulder was a Sunday morning, it hit a plateu at around 170 and I didn't know if my thermometer was broken or not...
Finishing it off in the oven sounds like a good idea. But the earliest I wanted to start it is 8:30 am and the party is at 1 PM. So would I have enough time to finish it in the oven?
