Looks great. The last time I did some BBB I had the meat cutters slice the butts in two length wise so that it gave me 2 nice slabs and the bone was much easier to cut out since half was in one side and half in the other.
SmokedaddyInc.com had a mix they use to sell they called "the perfect blend" I really liked and I think it was maple,hickory,and cherry. I haven't been on thier site for awhile though.
I've found that the butts that are 10-12 lbs make the best slabs after you take the bone out and in turn slice up real good. A Lil more room for error when deboning I guess.
Yup I'll be doing some myself pretty soon. I went into kroger on Saturday and they had loins for 1.29 a lb way to cheap to pass up. Once I started making pork jerky I never went back to beef.
I'm gonna start taking it apart today and give it a good cleaning and oiling. It looks like it may have been painted at one time. I think come spring I'm gonna strip and repaint it and have the chrome parts redone.
I wish I could keep it in the kitchen but the wife says it needs a forever home on a cart covered up in the garage LOL! That's ok I spend most of my time in there anyway!!
I scored this old globe slicer today in a trade! I've been wanting one like this for awhile. I traded a new compound bow that i only had a bill in. He was happy and I was happy so it's all good! It needs a lil cleaneing and greasing but it runs good and has all the parts.
I have my smoker setup in the heated part of my garage under an exhaust fan and I turned the therm and the smoker on and came in the house and it works great even with the RF's having to go through 3 or 4 walls. If I do overnight cooks the smoker goes outside.

I've been wanting this since I first seen it and the wife got it for me for valentine's day! I recently got amazen smoker that burns beautifully in the cajun injector. These two together is gonna be smokin heaven! Chuckies on deck for this weekend!!
Picked up a 5x8 amazen today. I did a dry run and it burn great in my Double door cajun electric smoker! it's gonna be really getting some use since I have a 10 lb rib roast I've been aging for Xmas and i'll also be doing some snack sticks and pork jerky while the kids are on christmas break.
