I'm wanting to try my hand at making Rytek Kutas' Sheboygan Summer Sausage Recipe. It calls for protein lined fibrous casings. Any reason why muslin casings wouldn't work for this? I don't think I would need to be concerned with the muslin not staying adhered to the meat during curing/drying...
Auber emailed me back and, unfortunately, since the SM066 is digital and not analog, I would have to do some re-wiring to bypass the control panel or hook up a power cord directly to its heating element inside, then plug that into the Auber controller to drive it.
I don't really have any issue with the smoker holding a consistent temp. I just would like to be able to control it from my phone. I do like that you can do more with the Auber PID controller, like program a smoke schedule. I emailed them to confirm that it will work on my SM066. I was hoping...
Anyone know if you could use an Inkbird wifi temp controller on the Cookshack Amerique SM066 without getting into rewiring stuff? I would love to be able to control the temp remotely but not sure it would work on this smoker because it has a start/stop button that you have to press every time...
That's super nice. Thanks for sharing. I have an big offset, a large BGE, a Cookshack Amerique and a Bradley, but none of them are very good at smoking sausages because none of them produce very good smoke at lower temps. I added a Smokai cold smoke generator to the Cookshack and it works fine...

Really love the new LSG Cabinet pellet smoker. Seems like it would be a great unit for sausage and snack sticks. Just can't justify $4k for a sausage smoker, haha.
Anyone ever seen these? Look like EXACTLY what I want as far as features. Separate heat and smoke function/controls, convection fan, nice aesthetics, etc. I believe they're made in Romania. Price isn't terrible but freight is about as much or more than the smoker. Any of you here in the U.S...
