I am going try smoking cheese for the first time tomorrow. Does it matter if the cheese is cold when i start to smoke it or do i need to let it warm up to room temp before starting? Can I put it on the smoker right out of the refridgerator?
I did a butt a couple weeks ago. Just put it on the smoker and maintain a temp around 225 in the smoker. Just let it do its thing until you get an internal temp of 200. Mine took 14 hrs to get up to temp, but it was delicious! Good Luck!

You can also go to your local welding supply shop and get one of their thermal welding blankets to wrap around the Bradley. Guys have used these in cold temps to help their smokers maintain heat. You can cut it to fit around the door and vent and use bungy style cords or clamps to secure it...

I dont think you will have to cook that turkey too much longer. I would keep cooking it until it reaches a temp of 165-170. i would put it in the oven at 325 and cook it until it reaches that range. This may also help to crisp up the skin too.

Cool. Its about 8 lbs. Ive been cooking it at 225 degrees all day. I live in Wisconsin and its cool and rainy out so that could be the reason that it is taking a bit longer, but I have the smoker out of the cool rain.
