Just built my ugly drum smoker yesterday and i had to try it out for easter. Got two boston butts ones 12 lbs the other is 9. Hoping to fit two tenderloins in during the final hour of the butts.

Agree with al on the spiral sliced.Did 2 hams last weekend one was spiral sliced the other i scored it on the surface. The edges of the spiral sliced were kinda dry but the other was perfection. I waited til it was 135 IT to glaze it and took the ham off at 145 IT . Also spritz the ham every 45...
