    Been busy the last couple of weeks getting my stocking stuffers smoked up and packaged for Christmas. Did some various flavors of cheeses, 2 double smoked hams, and 9 lbs. of Bear's uncased beef logs. Here are some pics of it all... Double smoked apple n cherry habanero jelly mixture...

    DIRTY LITTLE SECRET!!!!

    I keep a can of this around all the time. Open up, apply your favorite rub and slow smoke in pit for a couple of hours, sauce added if you choose to glaze, then sliced..... I use a spicey, brown sugar based rub on mine, that gets lightly crusty n golden......Ummm mmmm   good stuff Maynard!

    Is this a monster butt or a whole shoulder roast?

    More than likely, there are 2 butts in each bag. Also picnic shoulders and butt portions both smoke the same except I remove the skin from the picnic shoulder before smoking to allow more rub to the meat surface.

    Smoked Dried Beef with lots of Qview

    Found some eye of round this last week on sale and I now have 6 lbs of it in the fridge soaking in brine to be ready next week to smoke up. Looking forward to having this smoked, dried, sliced and on  my plate. Will post pics when it's done.
