I also like the big white cutting boards. We clean ours by running it the the dishwasher. And yes I have noticed that I have to sharpen my knives more when using these.

I have some of the Cabela's cure. The ingredients listed are:
Salt
Sugar
Brown Sugar
Sodium Nitrite
Less than 1% glycerine
Maple Sugar granules
The directions say for Brine use 1.75 lbs. to 1 gallon of water
For dry rub use 1lb for 25 lbs of pork belly.

On trout I use a brine similar to the one erain posted with great success. The only thing that I know makes a big difference is whether the trout is white meat or pink/red. White meat trout are usually farm raised and are not that good for smoking in my opinion.
My thoughts would be to smoke it...
