My range up here is about a 200 yard walk to a little over a 2 hour drive. Usually can find an open river for salmon or steehead almost any time of year. Though we do have tight limits. We would only do it there if there was a decent season at the time I am down there. Fished somewhere on the...
I am curious about the fishing down there, I make a few trips a year to see family in Stanislaus county and would plan a fishing trip with my brother in law and nephew. I didnt think there was much salmon fishing left down there.
It was a little on the dry side, compared to others I have done, but not bad, I think between the fat and about 36 hours soaking up the tampico probably helped. I didn't inject any of the juice, but I do pierce it all around so it gets inside some.
Freezer is full of pork so I had to try something different. I usually use apple cider for marinading, this time I used tampico/orange juice, with various spices, brown sugar and kosher salt. 2 nights soaking then rubbed the rest of the spices and BS on it and into the smoker at 630am, I was...
Thanks, I am planning on bacon, not sure I will get into making sausage. I am hoping to get out and chase some steelhead in the next few weeks, have not done enough fishing this year. I am terrible about taking pics of food, just never think of it, but I will try when I smoke next, which will be...

I usually do salmon, the only time I did trout was in an old brinkman charcoal smoker and it cooked rather than smoked( i was real newb then).
Sailor, if you leave the head on, then after it is done the bones really come out easy. I usually try to fillet them before hand, as I watched a...
You dont cut out the gut sack first? When I learned about razors and started getting them I was told they dont filter out like steamers so you have to clean them out by hand.
Thanks guys.
Sailor, I have been hearing about a few lakes in NE Washington with a parasite issue, the Kokes are dying off there. There are several both in the greater Seattle area and in Eastern Wa that still have healthy populations.
Craig, you need waterproof papers.
Nice to find a group from Washington. I just joined the forum a few days ago, and just joined the smoking community at the beginning of this year, mainly for smoking salmon and trout, but found out soon enough that pork is awesome and now into trying more things.
