I used some stove mortar on the two pots and got some vermiculite for insulation. I bent a can to set the pots above the cement base to let air in/ashes out, without the vermiculite settling at the holes and block the air/ashes.

Yeah, I’ve done a bunch of 4lb+ chucks over the past couple years since packer briskets have been hard to find near me, and even with wrapping they take 10+ hours at 275 +/-
I used a tank retainer wire from an old gas grill, I can shore it up more with some wire, but it seems workable.
there’s a terra-cotta bowl in the water bowl and the ends of the ring fit nicely.
I cleaned everything up and set a place for it.
The hole in the large concrete pot is 3/4” and the hole in the tandoor base pot is 1”. I’ll need to determine how much air flow I’ll need next.
I put this in this forum because it’ll be charcoal fired. Got all this for zero, I’ll need a few things to build it.

It’s like everyone says, cherry is mild like apple, versus hickory or oak. I should’ve let them go a little longer at the end, the middle ribs were more firm than I like, but the ends were just right.
