Quirks from the job that you bring home

I'm in charge of survey and layout for a site construction company. Part of my job includes being on the job when the concrete subs are there for quality control. Its mostly to ensure that everything is ADA compliant. So that means I'm always critiquing sidewalks everywhere I go. My wife is not...

Jeff's Rub was a miss, what next?

The best rubs I've ever had were cooked by a friend with just SPG. Now that's the only way I'll make them. I save the sugar and paprika based rubs for butts.

    Daytona 500 giveaway

I haven't really followed it so much since Dale Jr retired. So I threw a dart at the wall and came up with Chase Elliot with 54 laps.

    Garlic Confit Garlic Bread

We buy these little pita dippers and spread them on there. They can also be used pretty much anywhere you could use roasted garlic. We put them in mashed potatoes, pizza, and tossed salads. But our all time favorite is a dip. We spread goat cheese in a shallow dish and top it with the garlic...

I love garlic confit. We always keep a jar handy.

Super Bowl LVI is history and...

We went to dinner and saw a musical Saturday night to celebrate her birthday. Didn't even realize it was Valentine's weekend until we saw the specials menu. We decided that it counted as celebrating both.

    What you cooking for Superbowl

My father in law just released a batch of his barbecue sauce to stores with super bowl themed labels. He was smart enough to avoid that term on the label, but dumb enough to use the teams' logos and colors. We're lucky the company isn't widespread enough to bring any attention on him. My...

    What you cooking for Superbowl

My wife is from Sterling Heights, so it took a few tries to get it right and make her happy. She finally bought me a correct pan and I nailed it on my last attempt. I used the recipe from the King Arthur Flour website. Fortunately, its very similar to the pizza I grew up on. A lot of the places...

    Improvised Chicken Wings

You see, I try to be as much of a traditionalist/purest as much as possible. And that's just the complete opposite of practical and efficient.

    Improvised Chicken Wings

I've been using baking powder for a while, but I never used this much. I always just did a light sprinkle and they never came out as crispy as I hoped. I'll probably stick to the 1 Tbs per dozen wings ratio. Seemed to work well.

    Improvised Chicken Wings

The vortex is on the list. My plan for the weekend was a homemade vortex, but the wife decided that there were more important chores to be done.

    Improvised Chicken Wings

Thanks. I'll probably use this grill again next weekend for the game. But I'll probably use a chunks of charcoal along with the apple. And supplement with gas if I need a little extra heat. I just hope I don't spoil myself by being able to easily adjust temps with the twist of a knob.

    Improvised Chicken Wings

I was really excited to fire up my kettle for the first time ever on Sunday. I acquired it about 12 years ago from my girlfriend's (now wife) neighbor on moving day after graduation. I'm a hoarder, so I saved it from the dumpster. I never really had the urge to cook with charcoal until I ended...

    What you cooking for Superbowl

The kids are still young, so we don't go anywhere these days. So it will be smoked wings and a Detroit style pizza.

    Homemade Vortex?

Its kind of fitting, really. My job requires me to do a little bit of engineering from time to time, even though I'm nowhere near qualified. With some help from the internet, I'm usually able to BS my way through the basic stuff. I always tell people I'm a student at YIT, the Youtube Institute...

    Homemade Vortex?

I started trying to figure it out, but realized there had to be an easier way. Found a website with a cone template maker and just plugged in the numbers from the Vortex website. Saved me from any trial and error. I scaled it down and printed it out on a smaller sheet to make sure it worked...

    Homemade Vortex?

Good point. I guess I was hung up on stainless because that's what the commercial ones are made of. It probably doesn't add too much to the life of the product, just looks better. I'll do some head scratching tomorrow to come up with my measurements.

    Knife recommendations for trimming

I've bought different knives for every purpose, but I find myself reaching for a filet knife for most tasks. I buy the wood handled rapalas from Walmart. At $15 each, I keep them stashed all over the place. Never had a problem keeping them sharp with the cheap pull through sharpeners that come...
