Just found this thread, I modified my 30" like this yesterday then used it last night, much better, heat actually gets to the chips now. I have not drilled all the holes as you did though, just the tray mod.
Im still waiting to hear back from the tech guy, so I took the chip tray holder to work and cut open that plate below the tray so all the heat can get to the tray, it helps, definately dont soak the chips though! Smoked alot better now, still want the upgrade!
Ok, I took the chick tray out, and the holder for it and cut open the area under the chip tray so it gets all the heat now. She was smokin last night! Made duck jerky, and its awesome. Think Im gonna shove a chicken in that thing tomorrow!

Smoked duck jerky in it last night, yummmm! Way better than the oven! I did modify it already to smoke better though. :) Might shove a chicken in it tomorrow!

Im also going to be building a wood fired smoker bbq out of aluminum, unless that is a bad idea? In the near future. Should be fun.
I was just following the directions, tonight Ill try half as many, and not soak them. They didnt even burn or blacken actually.... I also had the top vent only cracked open and I read it should be full open. Im learning. I PM'd about the new box setup for these so they burn better too.
Great info, just tried to season my new 30" last night, it didnt even smoke at 275* for the last 45min as the instructions say. Ill remove that layer of metal and try to get the upgrade.

seasoned it last night, with 45min remaining on the 275* 3 hour cook it says to put wood chips in, it barely burnt any of them chips.. I figured it would have done better, any thoughts?
Excellent, thank you! Im just looking for simple stuff to get my feet wet, I dig this thing as its temp controlled and has a timer, more of a set and forget kinda thing once I get it figured out. Made Duck jerky in the oven the other day, and just want to expand my horizons. :)

Is there anything anywhere more directed towards using just the MES 30 or similar smokers? I cant do 350* in there and it seems alot of people have better smokers that can. Im new to this (have not even seasoned it yet) and am absorbing everything I can find. So I guess looking for info on...
Found the site on a smoker review on amazon. Bought a MES30 last night locally, been making wild game jerky in my oven and wanted a smoker for some time to do fish and meat in. I have Antelope, duck goose, bear, deer in the freezer so looking for fun simple things to do with it and more.
