    Yeah I definitely would not try and smoke anything in your apartments kitchen stove. Maybe look into if your apartment complex has some kind of storage or garage unit you could rent to store a smoker? and then just move it to a safe location when using it?? I won a pretty nice Weber side by side...

    15 hours seems like a long time to me. What were your ITs when you pulled them out? But you could definitely crutch it to soften the bark. Me personally love a nice good bark on a brisket.
